When the citric acid and baking soda mix, you'll see lots of bubbing happen very quickly as the result of an acid/base chemical reaction. Citric acid is a acid. Baking soda is a base also known as sodium bicarbonate. When the two mix, they form carbonic acid which is unstable. The carbonic acid quickly breaks down into water and CO2 or carbon dioxide - the same gas you exhale. As the gas is released, the pressure increases, it finally pushes the plug off the rocket .
